Resumo

New tourist motivations increases their seek for new destinations and activities to meet their needs. This makes certain activities that until recently were unthinkable that they could create a substantial tourist flow become new tourism resources. This is the case of olive tourism, a tourist typology with only a few years of existence, slowly emerging as an alternative form of tourism to classical models. For the olive tourism there is a convergence of elements that if combined in the right way, it can lead to a form of tourism with some important tourist flows. Due to the brief life of olive tourism, there is not an extensive literature about olive oil, still this article is to present the current state of the scientific literature dealing with the olive tourism from a worldview. Emphasizing Spain since it is a country of particular relevance in producing olive oil, especially in Andalusia, the region's most prolific when it comes to olive oil production is concerned.
